Cardoons are native to the Mediterranean region. Considered a vegetable Cardoons have a long history with ancient Romans enjoying cardoons as part of their meals. Cardoons are a type of thistle in the sunflower family and are closely related to artichokes. They're also known as the artichoke thistle. But instead of eating the flower buds as with artichokes, the stems are the edible part of cardoons.

Orach is a cool-season plant however, a warm-season alternative to spinach and less likely to bolt. A member of the Chenopodiaceae family, orach (Atriplex hortensis) is also known as Garden Orache, Red Orach, Mountain Spinach, and Sea Purslane. It is also sometimes referred to as Salt Bush due to its tolerance for alkaline and saline soils. The name orach is derived from the Latin ‘aurago’ meaning golden herb.

Momordica charantia, commonly called bitter melon, Goya, bitter apple, bitter gourd, bitter squash and balsam-pear is a tropical and subtropical vine of the family Cucurbitaceae. Widely grown in Asia, Africa, and the Caribbean for its edible fruit. Its many varieties differ substantially in the shape and bitterness of the fruit and can be quite striking and unusual in appearance.
